Times have changed since they moved to 34 Mont Bleu. Went in there to get some ground bison meat from la Ferme Takwanaw. They did not have any on display either fresh or frozen. The clerk said they only made it on request, which she offered to get the butcher to do for me. Never had the privilege of getting it fresh, so I didn't pay too much attention to the "ground beef" appearance of what I got. Except that when I cooked it and ate it, I realized I got fleeced by the butcher. This stuff was greasy and did not have the lean texture of bison meat. I contacted the farm where the meat purportedly came from and the owner confirmed that Boucherie Cholette had not ordered from her in over three weeks. Her opinion was that it would be impossible from them to have made me 'fresh' ground bison. Wow, the nerve of passing off ground beef as bison for $7.70 a pound. And that the entire staff there plays along with it. Pathetic. That'll teach me to stray from la Maison Bisson, my usual purveyor. Word to the wise.
